- Mix the flour, sugar, baking powder, xanthan gum if using and salt in a bowl.
- In a cup mix together the baking soda, 1 tbsp milk, vanilla and the vinegar to make a fizzy leavener.
- Make a well in the flour and add the rest of the milk and the vinegar mixture, stirring until a smooth doughy batter is formed.
- Fold in the blueberries. It's okay if some break or mash while stirring. Let the dough stand a minute while you heat the oil in a frying over medium heat.
