I'd had numerous requests for easy vegan dinner ideas, which is what inspired me to create it in the first place. But it's really shown me how important easy and simple recipes are for people.

  1. You need 400 g of The Meatless Farm's Meat Free Mince.
  2. You need 1 cup of chopped onion.
  3. You need 1.5 cups of sliced peppers.
  4. It's 1 tsp of garlic paste.
  5. Prepare 1 of heaped tsp ground coriander.
  6. It's 1 of heaped tsp cumin.
  7. It's 1 tsp of oregano.
  8. It's cube of Kallo veg stock.
  9. It's 2 tbsp of tomato paste.
  10. Prepare 390 g of chopped tomatoes (I use cartons over cans).
  11. You need 1 can of red kidney beans (drained and rinsed).
  12. Prepare 1 can of black eye beans (drained and rinsed).
  13. Prepare 1/2 tsp of chipotle paste.
  14. You need of Salt and pepper.
  15. It's of Extras - to serve.
  16. It's of Tortilla wraps.
  17. Prepare of Nachos.
  18. Prepare of Guacamole.
  19. You need of Veganaise.
  20. You need of Jalapenos.
  21. Prepare of Rice.

You can always add more chili powder or sriracha after cooking! You can't go wrong with a big pot of chili. Vegan chili is one of those nurturing meals that make the transition to a vegan diet so much easier, your bowl will be so full of flavour that you won't even want look back to your meat-eating days.

Vegan Chilli (sin carne!) step by step

  1. Fry your meat free mince according to packet and set aside.
  2. Fry onions, peppers and garlic until liquid is released and evaporated.
  3. Add coriander, cumin and oregano to the pan, crumble in stock cube, and cook for a minute.
  4. Add mince back to pan and stir until it is all incorporated.
  5. Add tomatoes and tomato paste to the meat and veg mixture, then add cold water to the empty carton (I used around half a carton) to get all the tomato-y goodness out!.
  6. Bring back to a simmer before adding the beans and the chipotle paste.
  7. Bring back to a simmer and add salt and pepper to taste.
  8. Simmer for about 10 minutes.
  9. Serve with your favourite accompaniments! We made wraps out of ours with veganaise, my easy guacamole, shredded violife cheese and crumbled nachos.
