- You need 2 1/2 lb of boneless, skinless chicken thighs.
- Prepare 2 cup of chicken broth - i use a chicken & tomato bouillon.
- It's 8 of bay leaves.
- Prepare 1 tbsp of adobo seasoning.
- You need 1 tsp of garlic powder.
- You need 1 tsp of dried oregano.
- Prepare 1 tsp of dried parsley.
- It's 1 of prepared rice.
- You need 1 of salt & pepper to taste.
Bay Chicken step by step
- ***Can use 2 1/2 lbs - 4 lbs of boneless or bone-in chicken - your preference *** In a large skillet or dutch oven, combine all ingredients. Bring to a boil for and simmer for a few minutes till all broth & spices seem well combined..
- Reduce heat to low. Simmer, uncovered, for about 40 to 45 minutes. Make sure you keep bay leaves in broth. Spoon broth over chicken occasionally & flip chicken thighs once or twice during cooking..
- I always serve this in a pasta bowl. I place in a piece of chicken and a few tablespoons of broth in the bowl - then spoon in a serving of rice on top...this way you can eat the rice & broth together but the rice doesn't get mushy..
- This recipe is also wonderful with bone - in chicken. I usually bake it covered slow, in a warm oven. Hope you enjoy ❤.
