- Prepare 1 kg of spinach (cleaned, washed and coarsely cut).
- You need 4 of leeks (the white part cut into round slices).
- Prepare 6 of spring onions (finely chopped).
- You need 1 of large dry onion (finely chopped).
- Prepare 1/2 bunch of dill (finely chopped).
- It's 2 handfuls of rice (I use long-grain).
- It's of olive oil.
- You need of salt, pepper.
- It's of fresh juice of 1 lemon.

- Cover the bottom of a pot with olive oil and sauté the onions together with the leeks..
- As soon as they become translucent, add the spinach, stir and cover until it gets tender. The spinach will let out its liquids so don't add water right away but later..
- When the spinach gets tender add the dill, the rice, 2 cups water, salt and pepper..
- Boil for 10' more minutes stirring often so that the rice doesn't stick to the bottom of the pot. Then remove from heat, pour in the lemon juice and set it aside covered to absorb its liquids..
- Serve with fresh bread and feta cheese!.
