- Heat the oil in a pan and add the onion, cinnamon stick and cloves, cooking gently until the onion has softened.
- Meanwhile add the saffron to the hot water and let stand.
- Rinse the rice well then add to the onion pan, stirring while cooking on a medium heat now for 5 minutes or until the rice starts to turn golden.
- Stir in the water, sugar, salt, coriander and cardamom, bring to the boil then turn down to a simmer.
- Put the lid on the pan and let simmer for 30 minutes or until all the water has been absorbed. The rice will look 'crater-like' on top, or 'holey' when done. Just fluff it with a fork and remove the cinnamon stick and cloves before serving.
