  1. Chilli-4,5 depending on how spicy u want it.
  2. Spices.
  3. Cloves-3,4.
  4. Cinnamon-1/2 inch stick.
  5. Cardamon-2.
  6. Peppercorns-1 teaspoon.
  7. Bay leaf-1.
  8. Nigella-1 teaspoon.
  9. Cumin-1 teaspoon.
  10. Coriander seeds-2 teaspoon.
  11. Mustard Seeds-1 teaspoon.
  12. Dry Red Chilli-1.
  13. Dry Mango-1 teaspoon.
  14. Fenugreek-1 teaspoon.
  15. Fennel Seeds-3/4 teaspoon.
  16. Star Anise-1,2.
  17. While the rice is soaking prep up the veggies you wish to add to the rice, you can use anything you like, I picked only seasonal vegetables: onion,beans,capsicum,carrot,ginger,garlic,chilli,potato,mint,coriander.
  18. Take a wok with about 2-3 tablespoon of oil and let it come to high heat..
  19. Add the onion,ginger,garlic,chilli and sauté till they become translucent.
  20. Next add remaining veggies and cook for a good 4-5 min.
  21. Then add in the ground spice mix and sauté for another minute.
  22. Finally add the rice, mix and cover it to let it cook in steam for another 7-8min.
  23. After 7-8 min open the lid add mint,coriander,tangy potato wedges,mix and let it simmer on low heat for another 5 min.
  24. Mint Raita-Whisk in a bowl curd,water,mint powder,cumin,salt,pepper,coriander paste,garlic paste for about 3-4 min.
  25. Serve hot with mint raita and mint-coriander chutney..
