- Soak the rice in water for about 5-6 hours or overnight. Wash it with normal water and drain all the water. Keep the rice to dry for 30 minutes. Grind it to make powder (rice flour) by using a mixure grinder..
- Heat one cup of water in a pan and add the jaggery. Add a pinch of salt. Stir it with medium flame till jaggery is completely dissolved and syrup is formed. The syrup should be consistent. You may test by putting a drop of the syrup into a bowl of water. If the drop of syrup doesn't get dissolved in water and remains apart, then your syrup is ready..
- Slowly add rice flour to the syrup and stir continuously to form a dough. After the dough is ready, keep it aside for 5-6 minutes..
- Grease your palms with a little ghee. Now take the dough in small portions and flatten it with the help of your palms to give them the shape of a small thick puri (arisa). Sprinkle few sesame seeds on top of small puri and press a little..
- Fry these puri (arisa) in ghee till they become golden brown. Take them out and serve after cooling. These arisas may be preserved in an airtight container at least for a month..
