  1. Soak rice for 2-3 hours.

  3. Strain the batter into a bowl,add salt to taste and stir well.
  4. Heat oil in a non stick fry pan or an uruli and saute the remaining 1 tablespoon of onions till they turn golden brown.You can add more onions if required.
  5. Add 6-8 ladles of the batter into this and close the utensil with a lid.
  6. Simmer the flame to medium and let it heat for about 5-8 minutes.
  7. Once the top portion of appam is cooked enough without any remains of liquid batter,using a spatula flip the appam.  The cooked layer of the appam should be a bit of golden brown and little hard in texture.
  8. Close the lid and let it heat for another 5-10 minutes in medium flame.
  9. Once its completely cooked (pierce a knife into it and take back, if you don't find much sticking around then its ready), take the appam and place it in a plate/cutting board and cut them into 4 or more triangular slices.
  10. Serve hot with your favorite curry.This dish is usually eaten with fish gravies. But since I'm an eggie, I have them with veg kuruma or spicy moong dal gravy :).
