Zarda.                             Yellow Sweet Rice The persian word 'zard' and it literally means yellow. As the dish name says, the rice grains are yellow in color. Ingredients of Zarda.                             Yellow Sweet Rice

  1. You need of Sela or basmati rice 1kg (if sela then soak for 2 hours).
  2. It's 750 gm of Sugar.
  3. It's 1/2 cup of Oil.
  4. Prepare 1 cup of Asrafi (tutti fruiti) (green and red).
  5. Prepare of Green cardamom 6_7.
  6. It's cloves of 3.
  7. Prepare of cinnamon sticks 2.
  8. It's 2 of Badiyanka phool.
  9. Prepare 1/2 cup of Almond and pistachio.
  10. It's 1/2 tsp of Yellow food colour.
  11. It's 8-10 of Dried dates.
  12. You need 1/2 cup of Raisins and dried coconut.
  13. You need of Coloured chamcham as your require.
  14. You need of Water as required.

How to Make Zarda (sweet yellow rice). Boil the rice with food colour. Because, this sweet rice is yellow in colour, hence called Zarda pulao or sweet pulao. The zarda rice is significantly popular dessert in Pakistan and Bangladesh also.

  1. Soak sela rice for 2 hours, cook in boiling water with 2 green cardamom,2 badiyan ka phool, 3 cloves, 2 cinnamon sticks and 1/2 tsp yellow food colour till full done, drain rice.
  2. In a pan add 1 kg sugar 2 green cardamom and half cup of water cook till thick sugar syrup is formed and sugar dissolve..
  3. Heat 1/2 cup of oil in a large pan add 4 green cardamom fry for 2 minutes now add sugar syrup, after 5 minutes add boiled yellow rice, cook for 10 to 15 minutes on high flam till syrup dries..
  4. Lastly add raisins, dried coconut, dried dates, asrafi (tutti fruti), almond, pistachio, Leave it on dum for 10 minutes, Mix before serving.. garnish with almond, pistachio, tutti fruiti and coloured chamcham...😋.
