- It's 1.5 cup of leftover cooked Rice.
- You need 3/4 cup of Besan.
- It's 3/4 tsp of Turmeric.
- It's 1.5 tsp of Red Chilli powder.
- It's 1 tsp of Ajwain.
- Prepare 4 tbsp of hot Oil.
- You need 1 tsp of Water.
- You need 3/4 tsp of Hing.
- It's to taste of Salt.
- You need for frying of Oil.
Sev is crispy, fine bhujiya-like strands - usually made of gram flour or chickpea flour (besan) -- which are flavoured with salt and coloured with turmeric powder. Talking about sev, chef Sadaf Hussain, says, "The name 'sev' comes from 'siv' (thread) referring to sewing. It is a popular munching snack in India. Bhujia Sev - Leftover Rice step by step
- Add 1tsp water. grind rice to fine paste.
- There should be no lumps in rice paste.Knead mixture well.
- Add besan, salt, masalas to rice.
- Make small well, add hot oil.
- Mix with spoon.
- Once slightly cooled, knead dough.
- Grease mould with oil and add rice mix in mould.
- Heat oil well. on low flame, using mould make sev.
- Fry on high flame until golden brown.
- Allow excess oil to be absorbed. store in air tight container on cooling.
